        1                   chilled uncooked pie shell
        3                   eggs
        1/4      tsp.       ginger
        1/4      tsp.       cloves
        1/4      tsp.       cinnamon
        1/4      tsp.       salt
        1        tbls.      sugar substitute
        2        tbls.      margarine or butter
        1 1/2    cup        cooked or canned pumpkin, hot
        1 1/2    cup        skim milk, scalded

Beat eggs and add, in order, spices, salt, sugar substitute,
melted butter/margarine, hot pumpkin, and scalded milk. Pour
mixture into chilled uncooked pie shell and bake at 450F for 10
minutes then at 325F for 30 minutes.

        1                   baked pie shell
        3                   eggs, separated
        4        tsp.       sugar substitute(or to taste)
        3        cups       skim milk
        4        tbls.      flour
        2        tbls.      cornstarch
        2        squares    unsweetened chocolate, melted
        1        tsp.       vanilla

Beat egg yolks and add sugar substitute. Make a thin smooth paste
by adding a little milk to the flour and cornstarch. Scald
remainder of milk and stir a little of it into each of the above
mixtures. Then slowly add them to the scalded milk and add the
melted chocolate. Cook until thick, stirring constantly. Remove
from heat. Add vanilla and fold in stiffly beaten egg whites.
Pour into pie shell and chill until set.

        1/2      cup        cocoa
        1/2      tsp.       salt
        1 1/2    cups       evaporated milk
        1 1/2    tsp.       sugar substitute(or to taste)
        1        tsp.       vanilla

Mix together cocoa and salt in top of double boiler. Add
evaporated milk gradually, stirring constantly in order to keep
mixture smooth. Cook over hot water until thick. Add sugar
substitute and vanilla. Pour into a glass jar and keep in
refrigerator.

Title: Diabetic's Hot Spiced Tea

        4        cups       water
        1/4      tsp.       cinnamon
        1/4      tsp.       nutmeg
        1/4      tsp.       whole cloves
        1        tbls.      sugar substitute(or to taste)
                            juice of 1 lemon
                            juice of 1 orange(1/2 scant cup)
        3        tbls.      tea, or 4 bags

Boil together water, cinnamon, nutmeg, cloves, and sugar
substitute for ten minutes. Remove from heat and pour over tea
which has been placed in a teapot and allow to steep 5 minutes.
Strain. Add orange and lemon juices. To serve, reheat to boiling
point. Also can be served cold over ice.

                            Sprinkle of nutmeg
                            Sprinkle of cinnamon

Beat egg until thick and lemon colored. Add milk, salt, vanilla
and your sugar substitute while still beating. Pour into a glass
and sprinkle lightly with cinnamon and nutmeg.
