Well, I was really hoping to try out Fast Tracker II, but it
says that my mem manager (himem) doesn't support XMS, when in
fact, that's what I am using. How do I get this thing to work?

I've never done this before, but I do believe to change the patch name,
you'll need to edit the .PAT file itself. Use the Patch Maker and edit
the patch name, then at the Patch Manager, have it view the names stored
in the patches.

BTW, speaking of Bank switching, has Advanced Gravis replied with the
issue? Do they even read the Musician's digest?

You can choose a menu option in the patch manager that lets you either
display general midi names, or patch file names, or names stored in the
patch files.
